Following his first Head Chef position in Chester’s Sticky Walnut, Jay now stamps his mark on the city with growing-led restaurant, twenty eight.
The menu encompasses a selection of British tapas-style dishes, ideal for sharing and with sustainability at its core. Closely following the growing schedule of local farm, Growing @ Field 28 in Daresbury, the restaurant highlights the freshest produce in its hyper-seasonal offering.
Passionate about sustainable dishes, Jay works to minimise waste creatively, incorporating by-product of dishes into exciting new menu items.
