Mark Ellis

Mark has trained in some of the finest five star hotels and Michelin-starred restaurants in the country.

Originally from the Wirral Mark began his career working in local restaurants before making the leap into fine dining working with Simon Radley at the Chester Grosvenor Hotel. He then left to undergo a cook’s tour of the UK working in some of the country’s best restaurants, including at Petrus for Gordon Ramsay.

He returned home to the North to over see the newly renovated Peckforton Castle in Tarporley as executive head chef where he earned 3 AA rosettes for the 1851 Restaurant.

It was during this time Mark appeared on BBC’s Great British Menu for two consecutive seasons representing the North west.

Mark left to open his own restaurant Allium, awarded 9/10 by tough critic Janet Reader for the Telegraph in its first six months of opening.

After having to close the restaurants and pubs in the group due to the pandemic Mark has been in semi retirement but has now returned to the industry with several exciting projects and appearances scheduled in 2024
