Darren is the owner and Chef at The Faulkner Pub, Bar and Restaurant in Hoole. He says he has been cooking for as long as he can remember. “I’m pretty much self-taught and I’ve been a chef in my own business for the last 7 years, which I have loved” I would say Andrew jones (Executive Chef @ The Faulkner) he’s been with me since the very start and has taught me a lot and together we have created something that we think is very special. We are both very proud of what we produce at The Faulkner.
We asked Darren which chefs he most admires and he said “Any chef that does his own thing and puts his life into the business like local chefs Gary Usher, Kevin Lynn and Liam McKay but in terms of Chefs I take inspiration from it would be the likes of James Martin who I admire the most. I love his style, he has a genuine love for great food. I also like chefs such as Tom Kitchen, Tom Kerridge, Nathen Outlaw
The Faulkner produces classic British with a modern gastro style and has a menu that changes with the seasons as Darren attempts to find the best local produce available and do it justice in this award winning pub.
What do you cook at home? “A great steak with a proper tasty sauce or a good old fashioned roast. Slow cooked leg of Lamb being a favourite”
Darren supports Manchester United and Wales and his favourite tipple is Pinot Noir, or a pint of Cheshire Cat and coffee
When you’re not working, what do you do for fun?
Spending time with the family, eating out and traveling

I’d like to have a chefs table at Osteria Francescana in Modena Italy or
How long do you see yourself being a chef?
I can’t imagine never cooking for people, it’s a real passion and there’s something very special about having someone compliment and enjoy what you’ve created
What’s the secret to a restaurant dish?
Great ingredients, presentation, consistency, and most of all flavour.
